Rice Krispies Squares - Avoca Style

I absolutely love Avoca, and the food that is sold there. Beautiful salads, breads, cakes, soups.. yum! Just delicious. Avoca make all their food look visually appealing also, which makes it almost impossible to leave the store with only buying what you initially went in to buy. I adore Avoca's Rice Krispie Squares and I wanted to try to make a substitute at home. I tried various recipes and quantities, and it has been difficult to get the balance right between the caramel stickiness of the Mars Bars and crispness of the cereal itself.  I think that I have finally come up with the right combination, so now I want to share it!

This recipe yields quite a large amount, and is perfect for parties (children's and adult's alike!). Feel free to adjust accordingly. As there is no baking involved, this can be a perfect recipe to get the kids involved with!

Rice Krispies Squares
Makes around 30 medium pieces

Ingredients
  • 600g Mars Bars
  • 200g butter
  • 3 tbsps golden syrup
  • 300g Rice Krispies
  • 400g chocolate

Recipe

1. Line a large, deep baking tin or square casserole with parchment or baking paper.

2. Chop the Mars Bars and butter into small chunks and place into a large saucepan. Put this on at a low heat, continuously stirring to prevent sticking and burning.

3. When the mixture comes to a liquid consistency (it might look a little bit lumpy!), mix with a balloon whisk and add in 3 tablespoons of golden syrup. Stir again with the whisk to combine.

4. Add the Rice Krispies to the liquid mixture, and stir until the Rice Krispies are evenly coated in the mixture.

5. Press the Rice Krispie mixture in to the lined tin using a spatula.

6. Melt the chocolate in a bowl over a pan of simmering water. Pour this over the Rice Krispie mixture, spread evenly and allow to set.

7. When the chocolate is set, remove from the tin, place on a cutting board and slice in to squares.

And Voilà! Ready to serve! Absolutely perfect with a cup of tea.
